Easy.

Phalanxes are the best all-round defender in the game. And they are the first troop the barracks produce. Build them.

I tend to build them out of a couple of villages only, then reinforce them out into the supply villages. That way, the all important armory upgrades can occur in a small number of villages only.

Plus, they are reasonably fast, so pulling them back and sending them back out is not a big issue.

Some players add Druids on top of that too. They are excellent defenders versus infantry. They consume two crop - they are not quite as good as phalanxes once you take the crop into account, and are more expensive. What you pay for is speed.

Still, it is an excellent idea to have Druids around, as they can reinforce very quickly.

Less so with haeduans.

Gauls should also build trappers, and the palisade offers effective and reasonably strong defense. Not that multiple trappers can be build in one village, and when torn down, the extra traps stay. Not a bad tip.
